Whole Wheat Banana Muffins

I bought more bananas than Zadey could eat. I try hard to avoid this since I tend to shy away from bananas these day and I believed banana bread to be a bad choice for me. And not that I’m saying this is wonderful and great nutritionally speaking, it’s much better than my original version of banana bread. So, banana muffins it is. There is no sugar, instead I used honey. Instead of white flour, whole wheat. And I replaced oil with sugar-free applesauce. The taste? Delicious and incredibly moist! And kid approved!

The sugar content came out a bit higher than I would of liked. Next time I will replace the honey with Splenda. However, I’ll also increase the applesauce to 1/2 cup so that the muffins remain very moist. Doing this will also bring down the calories.

Oatmeal Cottage Cheese Pancakes

I picked up this recipe from Bariatric Eating. I was a bit hesitant at first since I do not care for cottage cheese at all. But I took the jump that I would not taste it and they were awesome. Zadey even asks for “Mommy’s pancakes” now instead of the regular mix. These are just awesome. And there’s no reason why you couldn’t make a big batch and freeze. So good!

When it comes to breakfast and lunch, I’m all about what is quick. And it works best for me if I have my lunches premade so that when I’m ready to eat I grab something and go. This salad was a good solution. It made several 4 oz servings that I packed individually and put in the fridge. It kept good for a couple of days and I had the perfect lunch.

Easy Chili

As the weather is starting to get cooler I anxiously wait for warm soups and chili.

For this recipe, I made a lot. I had 5 lbs of ground beef that was going to go bad if I didn’t use it all. This was the best way I could think of using it. And with only 2 of us in the house, it went fast!
